Edmond Fallot

The Fallot family of Beaune, France has enjoyed a worldwide reputation for exceptional quality since 1840. The Edmond Fallot Mustard Mill, the last independent Burgundy ‘Moutarderie (mustard mill) is still housed on its original premises near Dijon.

Today, in Beaune, the Edmond Fallot company, anxious to maintain both quality and tradition, adhere to the techniques of the old craftsmen mustard makers, and use stone mills to grind the grains, thus preserving all of the gustatory qualities of the mustard.

They are also skilled makers of fine vinegars, which they integrate into their fabulous mustards. They pay the utmost attention to the wines and the origin of the wines they use.

By choosing a fine wine, Edmond Fallot believes they achieve the finest vinegar. So, they have added vinegars obtained from AOC wines, in this case, Burgundy, to their standard white vinegar. The vinegar maker then ages it in oak vats where the vinegar will take on body and acquire the organoleptic qualities that make it a select vinegar.

The Fallot company also pays close attention to the selection of flavors and essences. They market flavored vinegars (such as tarragon vinegar) as well as vinegars where the nose offers a subtle alliance with fruits such as raspberries, black currants or walnuts.

Our vinegars come in glass bottles, the only way to ensure correct keeping qualities, in 250 ml size, in a bottle that is identical in shape to that of Burgundy wines, with attractive labels.
