Jean LeBlanc Xeres (Sherry) Vinegar

Xeres vinegar is commonly known as sherry vinegar.  Jean LeBlanc’s Xeres vinegar can be used a salad dressing with the usual ratio of three parts oil to one part vinegar.  The rich nutty flavor or wine works best with the more robust flavors and foods such as beef, pork, and vegetables.  For an intimate dinner party, try pan seared duck foie gras served with baby spinach, red onions and Xeres vinegar.
